Josefin is a little bit like the name I have given this post. This was one of my first cakes I made and owe a lot to Cakes by Cliff for this one as it really got me into cake making. This was a variation of one of his amazing cakes.
It actually ended up being two cakes. Lemon and pistachio sponge cake, filled with pistachio swiss buttercream, topped with a lemon chocolate, roasted pistachios, lemon meringue, lemon curd, dehydrated lemons and cooked lemon meringue. So yes, very lemony.
